Embrace Your Inner Tunic

Betsey loves when the season changes so we can fill the shop with new looks & styles reflecting the latest trends. This spring we are thrilled with the sweet palate of colors-peach, mango, guava….kinda made us hungry for some fruity sorbet. What better fashion accent for that island feel than a tunic? We love the look of a loose tunic over leggings, jeggings, skinny jeans, or straight skirts. However, we also suggest cinching the tunic with a belt. This works well for the wider legged pants and skirts with broader hemlines. You can add a splash of color to the sheer, button down tunics with a tank underneath. Try an unexpected color like olive green or even bright orange. Add a chunky beaded necklace or bangle and you will be ready in no time for island hopping or…just daydreaming on the porch.

Pomegranate and Mint Sorbet

Ingredients

  • 1 cup Mint Simple Syrup, recipe follows
  • 2 cups 100 percent pomegranate juice (recommended: Pom Wonderful)
  • 1 cup orange juice
  • 1/2 cup mini semisweet chocolate chips
  • Fresh mint sprigs, for garnish

Directions

Special equipment: an ice cream maker

In a glass pitcher, combine the Mint Simple Syrup, pomegranate juice, and orange juice. Pour the pomegranate mixture in an ice cream maker and freeze according to the manufacturer's instructions. During the last 10 minutes of freezing time, add the mini chocolate chips.

Scoop the sorbet into dessert bowls and garnish with fresh mint sprigs.
